The only place I have found the individual gmail app sync toggles to control what gmail services will sync and which won't is:
Contacts>Menu>Accounts>then choose your account and and open a pane which has toggles for all available apps/services associated with this account.
Is this really the only place that is suppose to be.... I searched, read and searched again to find this easter egg. Am I missing something??? seems like this should be much more accessible, I can't be the only one who wants to sync only certain gmail services from certain accounts?
