Whenever I use the notification bar to view a new gmail e-mail, the newest email comes up automatically. How do I set it so that it just opens the inbox?

You don't. To do that you would just launch Gmail. When you tap a notification the idea is that you go straight to the item in question.

it only shows me how many new emails i have, it doesnt give me the option to select an individual email from the notification bar.

You can't change that, it's just how it is. You can still launch from there, hit menu, then go to the inbox and view all of your emails.
