Good old days of dumb apps/ads...

Most of you may remember that back when the internet was new, most ads used to be dumb, irrelevant and with most apps that are meant to be private didn't have access to the internet. I'm wondering what I can do to get my privacy back up to that level? I know that some things can not be avoided like using free email service but that's OK with me. I've installed adblock plus but what else can be done to be anonymous to marketers? Are there any private calendar apps that are not internet enabled? There's NoteCipher for notes which is excellent. What about for calendars and photos etc? Some apps don't need to access the internet at all so is there any way to block their access?
