I don't know if this was a question before, but is there a way to disable the long hold on the home button to open up Google?

The only other option for long press is svoice. I'm sure other launchers can let you customize it but not with touch wiz.

How is this above possible? I can't find any settings that would allow me to use SVoice when long pressing the home button

Go into your app drawer and find the app Svoice. When it opens, you'll run through some setup stuff and it makes long press on home button default for Svoice. You can then disable that in the Svoice settings if you wish.

Responsive in what way? If you mean that you want it to immediately go to the home screen when you press the button then overriding the long press won't do anything. The delay is due to the system waiting to see if the user will double tap (thus opening the camera). So if you want it more responsive, then disable the "double-tap to launch camera" functionality.

Oh ok I didn't know that only the double tap makes it less responsive
