I've had this s7 for about 6months that my ex gave me. I know nothing about initial owner and my ex reset the phone. Is there anyway for me to be able to bypass the original account info and start fresh

Legally or officially? No. You will need to know (or know someone that does know) the original Google account that was used on the device prior to the reset.
