batech and B. Diddy both have fine points. You can completely turn it off or if data is a concern you can set it to only upload when you have WiFi. I'm going to suggest something else because it sounds like you're kind of like me and take a lot of pics or feel that not every pic is worthy of being backed up. Here are two alternatives that might help if either of these is the case;

Option 1
In your Photos app you can also choose which folders get backed up, usually it defaults to your camera folder but it will also ask if you want to backup other folders if you add photos to them. For example an editing app like Light Photo Editor if you save a pic there it will tell you that it has found a new folder with photos and ask if you want to include them in backups. You can also create folders with a file manager and move photos around from one folder to another. This would allow you to turn off automatic backup for your camera folder and then you could move the photos you do care about into a folder you could call anything but let's say you call it Backups. Turn automatic backup on for your new folder "Backups" and then only items placed in that folder are backed up.

Option 2
Let Google do it's thing and occasionally open your Photos app and delete the items you don't want. Chances are if you don't want to back them up you really don't want them anyway so this gives you kind of a second look at them to decide if it's really something you want to keep or not. Plus you won't loose anything if the unexpected happens, broken screen, drowned phone, lost or stolen phone. Daily we get requests to help people recover photos they didn't backup. Memories they will never get back if they can't recover them. With this option your photos will always be backed up, you won't loose anything if something crazy happens and your weeding your own garden getting rid of things you'd rather not keep anyway. With option 1 you won't loose as much but you may loose that trip you just took and put off moving the photos because you were still on vacation. With bhatech's option everything is just gone. Now whether you choose to backup over data and WiFi or just Wifi that's kind of between you and your plan. I'd just hate to see you in here again in 6 or 7 months wanting to know how to recover photos from a phone that fell in the pool with photos that were never backed up.
 
Wish they would bring back the "sync only when charging" feature. Pretty stupid of them to get rid of that

I assume you're trying to conserve battery. If that's the case it shouldn't use much unless you're taking an extreme amount of pictures. I have never turned off synch on any device. Too be fair though if I knew now I'm going to be using it slot a may carry a juice pack but not for the sole purpose of picture taking.

as a father of 2 and a family only vlogger yeah I take a lot of pictures and YouTube videos haha so leaving it on isn't an option. The only when charging and wifi only options was perfect together
