If you haven't been over to SlateDroid lately, they have just released a beta of Ice Cream Sandwich for the gTablet.
It is still very much beta, and you want to be comfortable using NVFlash, CWM, and the possibility of needing to press the internal reset button (which involves removing the back casing, but I haven't had a need to do that yet).
This is a fully-developed kernel and AOSP version of Android made specifically for the gTablet - not a modified port from other systems (like the Gingerbread and Honeycomb ports). ICS includes hardware acceleration, HD video working, and some other nice tweaks.
