I want to move all the data files default folders to the SD External Storage and have the phone use that from this time forward. How does one do that?

Can I just MOVE them there and the phone will default to the new locations?

If you're talking about moving folders from the internal storage to the SD card, then no this won't work as you'd like.

Independent files such as media and documents may be read by their respective apps if the apps know to also read from the SD card. Many do, but this may not be automatic. They certainly won't automatically start saving files to those folders. You'll have to go into each app and manually set where you want it to save those files. Even this is not 100%, as the developer may program the app to only use the internal storage.

For system files, those usually can not be moved in the first place. If you were including those with your idea of "all the data files," it's not a good idea. If tied to an app, use that app's backup options to do so from within the app. When you install the app on the new phone, follow its restore procedure.
