Saw a video last night where the guy could write anywhere on the note and it would translate to text right there instead of in the handwriting bar at the bottom.

Did jelly bean take this ability away or change it to only be in that bat at the bottom of the screen?

I think you can do this only if you write in a text box. Choose the T with the box behind it in the Productivity Tools. At least, that is the way it is on my JB 4.1.2 US model.

It is possible to do on S note.

If you press on the normal text input so you get a blinking cursor on the screen then press on the handwriting -to-text tool you should notice The blinking notice remains . Now if you write anywhere the screen it should automatically change without the keyboard panel being used.

If there is not a blinking cursor on the screen then it will create a textbox. The key is to see if the cursor is present.

If you want to change from pure freehand and want to use a text box if you press "add textbox"then the blinking cursor will disappear, when you write next it will use a text box again.
