Help with question about Samsung Note 8 I just had unlocked by AT&T

They unlocked my phone so now it can be used on any carrier.. but I have a question.. does this mean i might get the update faster to Oreo or what does it mean to have it unlocked - is there any benefits other then just being able to put a sim in it for Verizon if i want to..

No, it doesn't mean that you'll get updates any differently than you did before. AT&T (rather than Samsung) will still push updates to your phone as they become available.

Isn't it dependent on your carrier when updates are sent? I am unlocked on Virgin Mobile Canada and my updates are generally received by me in a timely fashion.

Unlocked just means that it has no SIM restriction and you can use it with any carrier. The phone is still an AT&T phone so the updates will come from AT&T.
