Help with Rooting

So I think I would like to root my m8 finally. I have Verizon and recently updated the software to include eps, not sure if this changes anything. Are there any good tutorials out there, i found one but I wasnt sure if it would work with the new software. Also whats s-off? ive seen things about that but didn't know what it was. Any help would be greatly appreciated. Thanks!
