There is the Paranoid Android rom which is a tablet-phone ui.

Plus even if we got a bootable rom very few things will work.

Paranoid Android is your best bet, but I think the whole tablet ui should be more focused on higher end devices. It doesn't look so great on our screens to be honest.

If you take the current Paranoid Android I made, change your DPI to 85. You will then have the Honeycomb look.
