How can I change icons at bottom of home screen?

I found this once, and now can't find it again. I have 1 thing I removed, but can't figure out how to replace it.
 
I was trying to drag it from the Apps page, and it wouldn't stay there, I got it to work by first dragging to the upper part of the home page, then to the dock at the bottom. :)
 
You can also do the following for the lock screen:

Settings . . . Security . . . Lock Screen Options . . . Shortcuts

It takes you to a "Set sortcuts on lock screen" page where you can delete them or change their order.
 
I have the same issue with the Galaxy Note 2 - the Home Screen dock (or bottom) icons appear uneditable. It is a pain when you want to edit those you use the most. Any ideas?

To remove, they work the same as any of the apps on a screen. Just long press and drag to the recycle bin. To add them, unfortunately it appears you have to move the app to a space on one of the screens first, then drag down to the dock area.
 
If you really want full control, try Nova Launcher! It runs so buttery smooth on the S3, that I never notice any lag at all, plus there are lot more options for configuring the dock icons and the general home screens as well.

Did you work it out? Because all advice seems to refer to older/different versions, as no matter how long I long press the bottom app tray icons they seem uneditible. I've tried in 'edit' mode in Applications among many other approaches. I don't want to change launchers as I miss some of the S Pen stuff.. which I may get around to using.

- uninstalling apps
- creating folders

Why is this made so unintuitive to find?

guess the developers who made this don't use a SG themselves LOL

how do i change what they look like?
You can't change what the stock app icons look like, but you can use a 3rd party launcher or custom themes to make them appear differently. Search the Google Play Store or look in the various 'show us your Home screen' sub-forums for ideas. Ex. http://forums.androidcentral.com/showthread.php?t=188633

Have you looked at a 3rd party launcher? There are lots of good ones in the Google Play Store, and many of them that have a basic feature set that's free - here are just a few that I've tried that I could recommend:
