How can I get the update?

My One X is rooted, so I can't get the OTA update to begin. I'm willing to unroot to get the update. What is my best option to go about this? Can I manually install the update, and just let it unroot on its own, or do I have to unroot manually first.

Hmm, i used the oneclick route method that uses the ATT software update exploit. I'm actually not sure if it installed a custom recovery, because I don't remember doing it myself. On my last phone I installed clockwork mod manually, but I didn't do it myself this time.

Sounds like you then either need to unroot, or continue unlocking your phone... you are half in- half out right now.

If you do continue with the unlocking/custom recovery, make sure to install TWRP instead of CWM on this phone. CWM is available, but is old and not entirely functional nor supported for the HOX.

I have not unrooted before, but that might let you get the update OTA.

I'm still in this spot. I "unrooted" with the HTC Quickroot 1.1.13. I couldn't get the update.
Then I rooted and unrooted again, and same thing. When I do the att software update, it just searches for a bit, and then goes back to the "check for update" screen, and doesn't give me any message.

You could continue to unlock the bootloader, install Recovery and then install whatever ROM you want.

I think you can also do this-

As I understand things, which may be flawed since I would not load a stock rom unless I had to, I think the last portion of the first post explains how you can load this from a PC. It does look like this would wipe your phone, so you will want to copy your stuff. It also would put your phone into a state that is currently NOT rootable. Since that is the cause of your problem, you may not mind about that. The thread above would be better place to ask questions, but you are swimming with sharks in xda, so try not to take flaming personally.

Ok, stupid question, but if I unlock the bootloader and install a rom, won't that also wipe my phone? So I seem to have no option to get the OTA anymore through the regular update procedure, correct?

Yes, it is the locking, or unlocking, of the bootloader that wipes your phone. I would have guessed that unrooting would have been good enough to get it. You may want to troll in the Q & A Section over at xda here-

I would search that forum for a bit to see if your question has been asked, which it probably has and see. If not, start a new thread and ask. However, I think that RUU is the way to go. I think you are basically forcing the standard ATT update to install, and when you are done, you will be back to a bone stock 2.20 setup... including the inability to unroot (currently). That should mean you would be just fine for accepting future upgrades like a normal person though, which sounds like the way you want to go. I think this also might wipe you however, since you are not applying the update in the way that ATT does when pushing it out. I think either way, you are starting from a fresh install, factory reset phone. So long as you do not lock/unlock the bootloader though, I don't think you need to worry about losing the contents of the SD card.
