How can I remove my default contacts choice?

I accidentally chose to set a default option for new contacts rather than being asked to select a different option each time, which is what I want as I want some contacts on my Gmail account and some not. I have worked out how to change the default account but I cannot work out how to remove it altogether.

To be clear I need to select an account each time I add a new contact and do NOT want a default.
 
Welcome to Android Central! Just to clarify -- you're talking about an option within the Contacts app to select an account? Try going to Settings>Apps​, select the Contacts app, then Clear Defaults.

Contacts doesn't have a default set (the default is which app opens when a particular action occurs).

And, for both security and safety, all contacts should be Google contacts. If anything happens to the phone, anything saved to the phone or the SIM is lost. If a contact is saved as a Google contact, you can totally destroy the phone, but you won't lose the contact. (Google never accesses your contacts - they're encoded by the phone before they're saved.)
