Call your voicemail. Listen to the menu. It probably has a "more items" item. Choose that. Somewhere in the menu tree is the time before pickup. Figure 5 seconds per ring, then add 2 seconds. (It goes by time, not by number of rings.)

Or you can call your carrier's customer service number and ask them to change it for you.

This is from ATT Q&A on voicemails: Should be able to set up to 9 rings, or just call ATT and they can adjust your settings.

To change the number of times your phone will ring before voice mail picks up, call toll free 877-345-RING (877-345-7464). When you call the toll-free number, the system will ask you to enter your mailbox number and give you the following ring options:

I also wanted to know this, my ATT voice mail has no options for this. The number provided above never connects. I think your best bet is to call your carrier.
