How Do I Disable OTA & Amazon Launcher on a Fire HD 10 7th Gen?

I own a Fire HD 10 7th Gen and Amazon released an auto-update giving me the Fire OS 5.6.4.0 and taking away the option to make Nova Launcher my default launcher. I need help to disable OTA & the Amazon Launcher. Thanks!

You have to flash the older OS, then you can install Nova. To stop the OTA updates (if you don't, it will just update again), you have to root the device, then disable the OTA app (probably using something like Link2SD to freeze it).
