Welcome to Android Central! Are you talking about the Gmail app, or your Gmail account in the stock Email app?
In general, you don't have to sign out of your Gmail account on an Android device. Doing so generally means signing out of your Google account on the entire device, which means removing all of your Google data. If you're concerned about the security of your Gmail on your device, then make sure you have a good screen lock set up. You could also encrypt the device.
