How do I install a Samsung software update?

I have a Samsung Galaxy S7. There apparently was an unwanted, unasked for, unauthorized Samsung software update during the wee hours of the morning today (July 4th). I cannot crop photos or other similar thing that I could do yesterday (and up until around 3:00 AM this morning). It doesn't matter if it's my own photo or screenshot or something someone has sent me. I am irritated to say the least. I want to uninstal the update, whoever in their infinite wisdom, decided would be a good idea to do without anyone having a chance to decide if and/or when to install it. Any other time there has been on option to install now or later.
There has also been a change to minimizing files, apps, etc & then later closing them using the "X" in the corner of the screen. Now the name of each file/app is in a title bar (or whatever you want to call it) of some sort. Then it can be Xed out. I don't particularly like it but it's OK.
How do I fix this?
 
First thing you do is create an account so we know who we're working with.

Second, it sounds like Oreo was installed. Other than maybe a bug that has your photo stuff jacked up, in which you could try a factory reset, it sounds as though you're stuck with what you've got. I have an GS7 but I've not updated to Oreo, so I don't know for sure if what you've described is "normal", meaning there is a new way to accomplish what you need, or if it is actually a bug.
