How do I uninstall the latest Galaxy 7 update?

As far as I know, you can't. Once you update the software you are stuck with it.

You'll just get prompted for the update again though.

Is there something in particular you don't care for? Maybe the helpful folks here can point you in the right direction to resolve those concerns rather than doing an entire backup and flash of the device.
