I use Nova Launcher and it lets you back up your set up on the old phone and then you can do a restore on the new phone which saves a bunch of time (I email the back up file to myself and then on the new phone I find that back up in the email and Nova automatically launces and installs it). Installing my apps took longest amount of time. Since then I've tinkered with a few settings to get it dialed in a little bit. Took me a few to find the notification reminder for missed calls/messages/email since the LED reminder is now absent on the S10.
I typically do the same. This time I'm thinking to try the stock launcher. It looks pretty solid in One UI. My main love about Nova was the ability to open the notification blind pulling from anywhere on screen. Stock launcher does this now. And quite a bit that Nova does. Sure Nova has tons of other features but 90% of them I either don't use or don't care.
