You cannot bypass it. Try Google Account Recovery.

Rooting phone and gmail account are separate things and are independent of each other. You can delete all accounts from your device but still log into gmail from elsewhere... You should write down such information in the future. The Gmail account is your passport to any google stuff (Android), so it's very inconvenient not to have and even more inconvenient if you have one but can't remember it because google won't forget!
