There are some things I've googled on my phone that I'd like to permanently delete the history

I delete nothing. It’s a part of the history of the universe, and there it is. It’s fact.

C.S.Lewis speculated that a condition of gaining entry to Heaven is that we shall have to admit to everything we’ve ever said, thought and done, so that those things are transparent to all for all eternity. I can’t say I much like the sound of it, but those things are facts, after all. Not deleting Google search history may be a bit of good practice for that big day.

Does this also work for contact suggestions in Google Calendar? Was always wondering how to delete those as there's no handy "x" as in Outlook for instance.

Bear in mind that deleting history from your device will not delete anything from Google and its not hard for those who need to look at your history to find what you have been up to online!
What you do online shall remain forever.
You can use incognito mode which erases all records from your phone....

Incognito mode will only prevent future anonymous browsing. It will not erase any 'records'. Find good software to clean your phone especially when selling or gifting as is common.

Be advised that law enforcement have devices that extract everything from the phone unless completely written over. However, as far as I know they can't retrieve past text messages from Google.

And you don't even want to know the stuff they can get from Facebook.

And remember your phone is an excellent tracking device with cell tower info going back forever.

I am more concerned about the Gmail web application rather than on my phone. Is it possible to prevent specific suggestions coming up there?
You might be able to tinker with the autofill options. Other than that I don't have an answer.
