How do you change the color of print for apps on stock theme. Example: I want to change the word phone to white letters

I use Nova Launcher (Prime), which gives the option to change icon label colors.

I don't think you can, at least not on TouchWiz. If the Theme doesn't include that change, you can't customize it.
