I can't figure this out.

My phone often goes to this screen when it's in my pocket and I can't figure out why. I have the screen saver turned off so I don't understand what this is. Please help, it's bugging the crap out of me.

That would be the clock on the lockscreen. You can tap on it and it will enlarge and show the seconds alongside the minutes and hour.

So, it's possible something is turning your screen on and touching it in that area.

I think you're right, I think the touch sensitivity setting that's turned on by default is what's causing it.
 
There's a known issue with the proximity sensor that causes the phone to be activated while in the pocket. It also causes the AOD to never go to sleep. Hopefully Samsung will fix it soon.
