I can't seem to turn up the ear volume on my galaxy s5 phone.

If by ear volume you mean the volume while on a call try this...
While on a call press the "volume up" button.

You can personalize your hearing to your phone. Settings>call>personalize call settings ( scroll to bottom) Use 'adapt sound' settings to tune your phone. Works great.
