I didn't know that you could go split screen, adjust it to where one app takes a majority of the screen, and you can just switch back and forth. Is this something that the Fold could do all these years, and am I just learning this now?

90 / 10 is my favorite way to use two apps. Just tap on one side and the other shows

I'm loving it. It is also a temporary fix for Facebook not going into landscape mode anymore. It will do it in 90/10 mode
