I killed Google off, I think.

I deleted every single google that could be deleted and those I couldn't delete I Forced Stop/Disabled them on a Nexus 6P.

First thing that I noticed was how long battery lasted afterwards.

I was thinking that of Apps for replacements but they suck off your data too.

It's really a sad state of affairs. If I buy a phone out right, I should have a right to absolute privacy.

I'm searching for alternative OS to run, or Apps, for email, playing music and video, texting that are premium and do not steal my private information. Any suggestions?

The N6P is not my primary phone, it's a BlackBerry Passport Silver Edition. So I can mess it up. I was hoping cyanogen or umbutu was possible but it doesn't look good at all for a replacement OS.

Does anyone knows of a phone OS that will protect me, even if it's simply basic function and no Apps?

No such thing as absolute privacy once you have a smartphone. That is what you trade for all the free stuff you get.
That said, I firewall all stuff I don't use and only allow minimal permissions to apps..
Get a basic dumb phone, no internet access. Then you'll be tracked by the network via cell towers, but that's all they get at least.

I've done the same - either deleted or disabled most of Google.

I want my reference apps, which is why a dumb phone won't work. I can't carry a backpack full of books. Most apps need to work offline, too. I also use the camera quite a bit, except I prefer F-Stop to any Gallery. I also use Camera FV-5.

I don't do social or game, I know where I am, and I prefer using a laptop or my Linux deskop to do any major searching online or pay bills. I can't use Bluetooth - one car in the family has problems. Wants my phone rather than owner's flip and I had too much trouble setting it up for him. I don't need NFC.

I won't buy books or music from Google. Don't need them. I have an EU reader which doesn't even HAVE Google and I like it. I use independent booksellers.

I cannot be induced by any salesman to buy anything I don't want or need, so ads are useless. (I buy my apps, therefore no ads)

I believe that I am buying a device for MY convenience, not as a marketing platform for them.
