I tried to install HTC Alexa but get a message saying it's not compatable.

Where did you get your phone -- is it directly from a carrier, or is it an international unlocked version? What region of the world do you live in? If the phone was intended for a region where Alexa isn't available, or if you have a US phone on a carrier in a different country, that might lead to incompatibility.

I am in the UK and bought the phone from the UK network EE

Are you certain the phone didn't come with the Alexa app already installed? This article suggests that HTC has its own Alexa app preinstalled (which might be a differently tweaked version), so that might prevent the standalone Alexa app from being installed: https://www.androidcentral.com/htc-u11-gets-alexa-uk
