I use handcent sms instead of stock SMS any way to switch it out in the quick launch bar?

It was suppose to be "drag and drop" so when you are in app drawer just drag Handcent on to where stock icon is. If it don't work then going to have to wait I feel :|

Yeah when you drag it brings up the trash can so

What about if you long press on the stock sms icon, does it give you options?

Wait it brings up the trash can when you are in the app drawer? Strange hope we are talking about the same thing I DON"T mean to drag it from one of your homescreens. Open up your "apps" to when you are viewing them all and find handcent icon and try to move it from that drawer onto the default sms icon app below it.
