I want to Update to ARHD 40.3 but...

Newb here. I want to update to 40.3, but I am concerned about being on the original firmware.I am currently on 31.0 with s-on. I tried to update the firmware before updating to 31.0 a while back, but failed. I gave up after two days of trying to get it going with the following instructions:

[PLACEHOLDER] HTC One firmware collection for different CID/MID | 4.06.1540.2 - xda-developers

Then I read about s-off but I don't really understand what it is, and what it is used for. Should I go that route?

hopefully it'll help you out.
EDIT:
Firmware is also discussed here by a knowledgeable dev. Even though he's talking in conjuction with the Viper ROM, I think it applies to all Android phones.
