A factory reset will not delete the update. The update is a one shot deal until the next one comes along.....

ok so if i wipe the phone im still going to have the new software i just downloaded? Im really not as dumb as im making myself seem right now lol im coming from a blackberry so i never had to deal with any of this before just wanna make sure i wont end up with that crappy software I had before the update

Once the update is installed in your system only using Odin to flash to a different version of OS will change things. There is also rooting your phone and installing custom ROMs.

Otherwise you can do factory resets/wipes all day long and you will still have EC05 on your device once its installed.

I accepted my OTA when it first came out but had some issues and now I've been flashing different ROMs for a few days now and every time I Odin back to stock I get the OTA again. I think anytime it detects a stock Eclair ROM it sends out the "do you want to upgrade" option.

Best work around for this if your flashing custom ROMs, if you do Odin back to Eclair 2.1 (DI18) or Froyo EB13 as soon as your done using Odin to restore and it boots up for the first time shut down your Data immediately (power button, select data off from the menu). This will stop Google from detecting the device and sending the OTA update. Then you can root and make whatever custom ROM changes you want without the update being downloaded into the device. One your on your custom ROM then you will no longer have any OTA updates coming threw..

This should only happen for as long as Google continues to push the update OTA.
