But a total newb to android with the LG optimus S. I know a ton can be be done to mod/hack an android phone but where should I start? Remember the KISS rule needs to be applied here. And thank you in advance...

Then go from there. If you want to change the way your phone looks then check out different ROMS.

After rooting you have many options, nandroid backup, cache cleaner without rebooting, free wifi tether, screen shot apps and the list goes on.
