Importance of s-on/s-off

I am new to the whole rooting thing and was wondering what the importance of the s-on/s-off function is. I have done quite a bit of research on the subject, but I can't get a good explanation to whether I need to turn s-off whenever I root my phone or if it is even required.
 
If I remember correctly, in order to flash cyanogenmod 6.1 you need to update the radio and you need s-off to do that.

I also recall that unrevoked forever went even faster and easier than unrevoked.
 
If you use unrevoked to root, it will give you s-off automatically. Some phones you need to go back and do unrevoked forever to get s-off, but not with the Dinc. The normal unrevoked will give you s-off when it roots for you. If your going to root, unrevoked is the easiest way, and s-off is probably something you want, if not now, probably down the road as you play around more.
