Go get the "Network" app. There's a button marked "Turn Off Radio" that'll do exactly what you need. I use it to turn off the radio in my Sprint-deactivated Moment so I can use it on WiFi only and not have the essentially-useless radio drain the battery once it's set the time from the Sprint network. (And I also use it when flying so I can run my Bluetooth headset and/or WiFi too; "Airplane Mode" shuts off BT when it shuts off the radios).
