Is anyone having major problems on the S10 after this 2.1 update

The handset is slow and I have to tap apps/keyboard twice for everything i want to open or type

Have you tried restarting and clearing the cache?

Definitely would start with what suggested above , clear cache in recovery and go from there.

The Tasks Switcher button does not open the last app I used when I double tap it. It just pulls all the open apps

Update: seems to be back to normal
