Besides the internal storage increase, would you notice any difference ?

I do not have the phone but you will not notice any difference at all. I have a phone with 3GB of RAM and one more RAM not going to do any difference.
 
More RAM will not make any difference in speed, but will eliminate more screen refreshes with multiple apps open. More RAM is never a bad thing.

I cant notice any difference from my old galaxy s6 edge+ with 4gb ram and my mate 8 with 3gb ram.

If you are a heavy user, I am sure you will when e.g. playing games, running multiple heavy apps like Facebook, Chrome, Microsoft Excel etc...

If I were getting this phone, I'd go straight to the 4GB RAM variant, why get the 3GB RAM one when the 4GB is not that much more costly, and you get more internal mem and a phone that is more 'futureproof'. Just my 2c.
