Is there any way to change the size of app folders once you've opened them?

Some of my app folders only have maybe 2 or 3 apps in them, and are near the bottom of my screen. But when I press them, the folder takes up the whole screen and I have to click one of my 2 or 3 apps at the top of the screen. This wasn't a problem on my previous phones.

That depends on the launcher you're using, and the version of the launcher. In Nova Launcher, the folder opens only as large as it has to be to show the apps in it.
