Is this normal when I power on/off

When I turn my phone off for a few minutes and turn it back on, the apps running in the background are still there. I figured they would go away after powering off. Is this normal?

Depends on what apps you are referring to. System apps and certain user apps will start up with the phone by default.

I know those open right away but these are apps that I was using before I turned the phone off. (Facebook, Zedge, yahoo mail)

Facebook and Yahoo mail apps will definitely start up and be running in the background when the phone is booted up as you would not be able to receive messages otherwise. Don't know about Zedge.

You didn't say that!

Try wiping your cache partition in recovery mode. See #1.3 of S5 Lollipop Update Problems - Dummies Guide
