Ok, so I updated to zvh and gRom and I hate it, I'd like to go back to zvd and cm7 so I'm just checkin on the process to do this to see if I have it right.

Back to stock recovery
Install zvh update.zip
Install zvd update.zip
Re-install custom recovery
Install cm7
 
You can skip some of those steps (assuming you currently ahve CWMA v1.2518.6), see reference b in Official Sprint ZVD / Froyo downgrade now available

Simplified version:
install zvd update.zip
install zvd update.zip
re-install root, custom recovery
install cm7

It is rather easy. Boot to recovery, turn off signature verification, choose zip from sdcard, find the zvd update.zip and flash then reboot. Reboot to the now stock recovery, and choose first option run update.zip. once you reboot you are ready to achieve root, custom recovery and then flash cm7

I missed that part about turning off signature verification. So if you have CWMA recovery the official Sprint update.zip does not have a valid signature?

The signature verification was added to xionia as a way to keep people from bricking their phones so only custom roms would flash. You need to bypass this security to allow the sprint zip to flash.
