The size is typically coded into the app itself. I searched for big Keyboard and got several hits. You can try those.

I think on thumb keyboard you can adjust the key size. It is also a good keyboard to take advantage of the Galaxy Note screen size.

I currently use SwiftKey and it does have options to adjust key height but only small normal or large.

Also if you have trouble maybe try typing in landscape for larger keys than portrait orientation.

My wife also struggles to hit the right keys due to long nails, until I pointed out she could use the stylus.
