I have been with Samsung since early 2000's, and I have decided to Switch. Current Pixel users, what can I honestly expect from the Google Pixel phone?
A smoother overall experience. I too have been with Samsung for years but had a short jump to pixel a while back and I would have stayed if it weren't for a broken camera. I loved the overall experience so much better than Samsung's experience with Android
You shouldn't have to modify so many things to get the phone set up the way that you'd prefer. I always thought my Galaxy S phones were completely set up my way, but then I'd get a notification from an app that I didn't know would make noise and then I'd have to change more settings. You should also get better battery life in my experience.
It's purely subjective. I love my s9, no complaints whatsoever. But I also like what the pixel brings to the table. Nothing wrong with switching, then going back if you still prefer samsung.
I have an S9 and have ordered a Pixel 3. I too get irritated with all these Samsung software updates. I get the notification and am left thinking 'WTF is that and why do I need it?'. I had a Pixel 2 prior to the S9 but I really couldn't deal with the huge bezels. The Pixel 3 looks so much better in this respect. I'll probably keep the S9 so I can flit if I feel like it without spending any more money.

Honestly it's all personal preference. I like both devices for what they are but I lean more towards Samsung because it just offers more features for the money. Samsung devices have gotten a lot smoother and faster with their UI that it's not even that noticeable anymore compared to the Pixel. People will always use the argument that they go with the Pixel because of the security updates but with Samsung, ever since the S8, they've consistently only been at least 3 to 4 weeks behind which is pretty good considering they have to test the update first with various models and carriers. They may not release a major Android release until after a few months but at least security updates are pretty on point and major OS releases are honestly never anything that big of a change to really want it.
I say if you enjoy Samsung then you might want to stick with it if you like their features but if you want to try something new then the Pixel is a great choice too.
