More noob questions... mms and apps running

Sorry guys, few more issues.

I got a video mms from an iphone and the quality was terrible. How can I get good quality video/pics via mms?

I have noticed about 10-15 certain apps keep opening and running themselves. I use a app killer and then open the killer 5 min later and most are back running. How can I stop apparently from opening/running themselves? Can't seem to find a setting in the apps themselves.

No voice commands from earbuds? I frequently used that on my iPhone. Like "play songs by...." Any tips?

I was told when I got my infuse that android has a habit of running programs even after you kill them....some apps will allow you to stop background data collection but if you do not kill your back ground data collection on t he phone its self then apps will continue to start up.
