My Moto g8 phone used to timeout on screen fine (set to 30 seconds in settings) but a few days ago it just stopped. Now, unless I press the lock button the screen will remain active, unlocked on full brightness until I press the lock button.

Double check your screen time out and lock screen are set to 30 second or if you have smart lock enable

Welcome to Android Central! No Android phone will keep its screen on indefinitely while not plugged in, unless there's a 3rd party app responsible.
