Usually it will delete from both devices.

Yes, you just swipe it away on your watch and the text message stays on the phone.

If you get a notification and you just dismiss or swipe it to clear on your watch, you are only removing the "notification" of the message. The message will still remain in your messages inbox.

However, if you open the Messages app and then choose DELETE conversation, it will delete from both devices.
