The altimeter app tells you your current elevation, but I’m looking for an app for my watch that will tell me the elevation change that occurred during a walk or a run. Does anybody know if such an app is available in the Galaxy Store?

I hike, and my Active 2 will notify me of any altitude change once I start the activity, be it hundreds of feet or only 10. I haven't completely explored this feature, so I don't know if it has settings, but unless I'm mistaken, you should be notified at some point. Don't know if there is another Samsung app that is specific for running.
Thanks for this. It installed fine (with it's companion app), and I hope to try it out this week. Will report back with results.
