Need help choosing ROM (SM-G900W8)

Hey!
I decided to dust off my old trusty 5S and use it, but noticed that I cannot get OTA updates and so I am stuck with Android 4.4.2
I read the dummies guide and it helped me a lot, one thing I still can't understand is - which ROM to pick if the available ROM's does not match my country?

AP : G900W8VLU1ANCG
CP : G900TUVU1ANCH
CSC : G900TTMB1ANCH
HW Rev. : G900T.00
Android : 4.4.2_EYAL_MOBILE
Build : KOT49H.G900W8VLU1ANCG_EYAL_MOBILE

Something doesn't look right to me up there, some sort of a mix between G900W8 & G900T?
Under my battery it says: SMG900T

Anyways, the only ROM's I could find are either from Canada or Puerto Rico while I'm from Israel.
Puerto Rico seems to be the latest (Changelist : 10278017) but I'm unsure if by installing it I'll still be able to make calls with my SIM card?

I didn't flash anything yet as I'm very unsure.

This kind of thing is best asked at the XDA Developers forum because they are the source for most modding and flashing new ROMs and such.

I will say that given how old your phone is, you won't be able to update to anything close to a recent version of Android, nor get any security updates. You really should think about replacing it with something current, or even a couple years old.

I will try the XDA forums, although, after a short check it seems like the popular thing over there are custom ROM's.
While I would love having 5S with android 10/11/so on, one would think that having a custom ROM installed as oppose to an original ROM could be a bit dangerous? dangerous as in 'stealing your information' kind of thing or am I off? (I really don't know much about the subject)

There's is going to be a risk no matter what you do because getting anything newer than what came as the latest OTA update is going to require some level of customizing and messing with things the average user isn't meant to touch.

On the flip side, XDA is generally a well regarded source of info. The users can be brash sometimes, but the custom ROMs and such they offer are well intentioned. Anything released there is likely part of a collaboration or vetted after the fact, which helps prevent security risks from being let in.

Welcome to AC!
Due to how old and way out of date Android version and no support by OEM /Google/developers and not safe for your data also way under spec , just use it the way it is not going to get any better version.

What are your primary reasons to use this outdated device?
