Here's my prediction. They will indeed put an HDR toggle interface element on video playback. When you hit it, you'll get a message reading "That feature isn't available for this subscription type. Please subscribe to the 4K HDR plan to enable this feature." Just like casting and missing content in the basic/ads plan.
