New GS3 and a few questions

I just bought the GS3 today to replace my Gnex. I was wondering a few things. One, is there a way to customize the standard buttons at the bottom to your liking? Two, why is it that all the Apps aren't in alphabetical order? Seems like half are and half aren't? And last but not least, how can I get app data off the GNex and put it on the GS3? Like for instance I like playing Slotomania but I dont want to loose how far I have gotten. Neither phone is rooted or unlocked. Thanks for the advice

And how do I get it to stop seeing images on the computers on my network? Thats nuts I dont want to see 10K pics every time I look in my phones Gallery.

Ok I finally got most of those questions answered. I think its ed though that I had to turn off media sharing on the systems in the house to get the GS3 to stop seeing it. I should have been able to turn that off on the phone and it just not look for it. So now all I need to know is how I can back up app data from my GNex so I can have the saved data on the GS3
 
There are some apps (MyBackup Pro: http://market.android.com/details?id=com.rerware.android.MyBackupPro
Titanium Backup: http://market.android.com/details?id=com.keramidas.TitaniumBackup) [there are free versions of those you can try out] that allow you to backup your data along with the app. Or you can just use a file manager to copy the data from your old phone to the SGSIII.

Will those back up my data and restore on a non rooted device? Both are completely stock.
