I just made the switch from iPhone to Samsung today and I own a iMac what's the best app to get so that I can transfer and back up my new device on a mac?

I just checked it out but it's for People that switched to iPhones but I just changed to Samsung

Try Samsung Side Sync. It's supposed to allow that.

Sorry not a Mac person. On Windows you can just plug an Android phone in and treat it like a regular flash drive.

I use Samsung SideSync to quickly share docs, photos, etc. between my S7e and my macbook. For backup I use Samsung SmartSwitch which makes it easy to restore to the original phone and/or when you get a new Samsung phone. Both are available for download to your mac on Samsung's website and from the Galaxy app store for your phone although they should already be on your phone. HTH

I know this is a stupid question but should you add your SIM card for the transfer to work properly?

Nope. SIM card has nothing to do with these stuff.
